I have to disagree, since in this run Ninja is not available... Dark Knight can equip 3 of the 5 ultimate weapons
That doesn't mean they are a general purpose job. A Knight is a general purpose job because it's usable when you get it all the way till the end of the game; you know, serving a non-specialized "general role". Dark Knight is the opposite of that, required for one specific area and only useful for certain parts of the game.

And I don't think I'm gunna win without major grinding. I have Cerberus down so I can grind in the Realm of Darkness which has better payouts than anywhere on the overworld, but ya

Good luck beating ahriman with that party, lmao. I would say it's probably not possible at all with that lineup, because you have not one, single, dedicated healer. And you could get double meteor'd. Possibilities open up if you replace one of those with a devout.
You could maybe get away with doing something like that in Final Fantasy 5, because that game is easier, and you got OP gear like the chicken knife.
They said in the OP it was a fiest, That means they pick or are assigned one job from each crystal and those are the only four jobs allowed in the whole run, I believe. It's a challenge run, popular in FFV especially.
It's possible in this game, with crystal gear, ribbons, and the weapons from Eureka, but you'd have to over level for the final dungeon. At least mid 60s or more. But that's part of the run.
Maybe if you grinded 5k+ HP on everyone, you could attack 1 turn, then chug elixirs on the next, and hope you don't rip to RNG back to back meteors at some point in the fight, but hoping and praying isn't really a strategy.
Might need to get as high as somewhere in the 70s to hit those numbers, but far far from impossible.
Except he's using 2 Dark Knights instead of using... anything else for a Water Crystal job. Even just 1 you can limp along with for awhile, but 2? Do 2 Thief then from that mix, or choose some classes that aren't garbage for 5/6ths of the game.
What I did was a d5 for the first job, then a d4, then a d7 (iirc) and finally a d3. So before the Magus joined I had 2 Dark Knights.
Technically there was nothing preventing me from sticking with 2+ thieves, but whatevs
