Here are two GOOD souls-like games to play instead.

The dlc is worth it. This game is the closest to a soulslike from an indie dev I've seen, while still doing its own thing (this time a scifi setting). Highly recommend!

The dlc isn't worth it. This one's a little different. The combat shares many similarities with a soulslike, but most everything else is different. For one there's a ton of story and lore to find and listen to from npcs, or you can skip it if boring. Some people think the combat feels off, but I found it felt great and fluid. Worth checking out with an open mind, also highly recommended.

Hellpoint is way better than both Surge games by a mile.

Having played a substantial amount of both Surge 2 and Hellpoint, I'd say they're both really good in different ways tbh. But it's all down to personal preference.

Mortal Shell is also very meh. If we're talking similar grimdark setting, with a passable combat, the only thing I can think of is Immortal: Unchained. It has its share of issues, enemies becoming bulletspongey as you progress and weapon balance skewed towards sniper rifles especially lategame but it's subjectively good enough.
It also has exp/levels, and a tiny bit of customization, not much just a few presets, but still ahead off Hellpoint/Bleak Faith/Mortal Shell. It's also the only soulslike with guns, which makes more sense in a futuristic content than beating on each other with rusty pipes and axes.

I would avoid stormbreaker DLC, I found it terrible.
Mortal Shell is head and shoulders above any of this. You gotta be insane to think otherwise.

I've played hellpoint and while it was enjoyable I'd say after the more recent updates bleak faith is a better game, the exploration is great in hellpoint but I found the combat and animations to be a bit lacking, the reuse of pretty much every boss as a regular enemy also makes them a bit underwhelming, and besides 3 or 4 most of their move sets are pretty easy to deal with.

It has been a while but now that you mention it, yeah the enemies are simpler compared to other souls games. For me it still did not matter at all, because the setting was just so amazingly intriguing and the game fun despite enemies lacking.

I only played the original bleak faith on release, so no idea how it changed, but its atmosphere was also beyond what most souls games achieve despite its jankines.

Bleak Faith is the best souls like I've played, you didn't enjoy it that's fine, you can ♥♥♥♥ off

I am a weird Souls Like player. I played most of them but I don't like Fromsoftwares originals (Sekiro, Dark Souls 1 + 2) less then most other titles. I liked Sekiro the most out of these 3 I played.

My top 3 is:

1. Lies of P
2. Asterigos: Curse of the Stars
3. Steelrising

Next on my list is The Surge 2, Flintlock: Siege of Dawn and Dark Souls 3.

I am quite happy that Hellpoint and Asterigos get some recommandation here.
