Where should I spend gold?

i'd save up some gold to buy a captained ship, it will unlock the sovereigns and makes turning in loot much much quicker and easier (also safer considering less risk due to time saved)

other than that everything is pretty much purely cosmetic, so buy whatever you think looks cool

Because the game doesn't have any real progression and all purchasable items work the same, the only usage that gold has is the cosmetics.
You can purchase Captained ships, but even with them you pretty much need only one ship and you're set for the rest of the game.

After captained ship and some cosmetics the money is just for buying supplies to start your sessions faster.

Captain ship first. Any skin ship , weapons ,that you have unlocked that you like. Then trinkets for your boat so you can have little things on your boat for decoration.
