Training sabers are pre-made, to be fair, and one of the hallmarks of a Padawan's rise to Master is building their own saber.
I don't think that was a training saber. When reaching Ilum, Cal compares coming as an adult to coming as a child. He specifically recalls being there with Master Yoda, meaning the saber is not a training one, making the loss of his saber more significant. So the, probable, cannon color is blue; however, a force user's imprint can change overtime so really there is no "cannon color."

You're fine, and you make a good point in an imprint changing over time. I mean, it's how a White Lightsaber comes to pass, by healing the "bleeding crystal" in a red Sith one, yes.
Cyan would imply that he’s a guardian of justice and peace, but also has a deep connection with the force [blue(guardian) + green(force master) = cyan].
Other colors such as yellow/purple/indigo/orange don’t align with his personality or his motivation for seeking out the force. At heart, he’s a protector with an empath ability that is very rare in the Jedi order.
If anything, I hate his stupid line about the crystal choosing the jedi like you were a Harry Potter Wizard wannabe looking for your first wand. To be fair, Disney threw out 90% of the lore regardless.

Cal Kastis seems to lean towards Jedi Guardian, who generally have blue crystals. So canonically speaking, his lightsaber crystal would be blue. That being said, pitiful few Jedis have survived Order 66, and the ones who did are quite exception individuals (although you could argue that the force guides them), so it's entirely possible that Cal 's light saber colour would change, since he is not only a very lucky individual, but also appear to be a Jedi padawan with above average potential, especially after he obtains his replacement crystal after going to Ilum.
I mean... slight spoiler but it's not his.
1) As a padawan, Cal recalls being brought to a Jedi temple with Yoda, along with other padawans, to get his first crafted blue lightsaber. He does not craft it entirely by himself. It's more of a padawan school field trip. Cal dropped and lost it as a young boy.
2) As a parting gift, Cal's Master gave him his double bladed blue lightsaber. This is the saber Cal uses through most of the game.
3) With a bit of self discovery, you eventually get to make your own lightsaber signifying Cal's becoming a Jedi Knight. So if you want to keep up with past lightsabers, it would be blue.Otherwise, in this important moment, you the player get to ultimately decide full fledged Jedi Knight color gets to be.
If you re-read the entire thread, the whole point is to analyse Cal's lightsaber based on SW canon, which is mostly based on other sources, not (just) the game, which compromised on certain aspects of established lore in order to give players a greater degree of aesthestics and role-play elements.
tl;dr: You're missing the point of the whole thread.
