You can leave it for later, or you can use him to train how to parry and when you have to dodge.
The "slow down the enemy" mechanic comes into use when he wanna grab you with his tongue, since you can cut it off but I've never managed to do that.
Don't see how, there's no reason to kill it the first time you're there. You can't open the chest yet and you can get the echo w/o doing that if you chose, not that you need to at that point as by the time you came back to kill it you still won't have 3 yet so you're not shorting yourself. There's not much to learn as far as fighting that frog, it's only a little challenging b/c of how hard it hits, attack patterns are not hard to learn though.
So basically all you're doing is fighting it when it will be harder for no reward at all. Come back after you get the thing you need to open the chest you'll be a little stronger and the fight a bit easier.
I think you get an entire skill point for defeating a boss like that.
