There is very little reason to use double blade against single enemies or bosses.
You seeing people using double blade all the time it's either because they were not paying attention to the tutorial when you first pick it up.. or because they just think it's cool and don't care about it dealing less damage.
On top of that, lately you learn combos that change the type right on the middle of it while extending the offense... I found that very useful against anything to keep the pressure on.
The double is also the best for deflecting blasters.
Colour is cosmetic only.
Also because I have finally made it to the final mission on Grand Master so not sure if I can beat the final boss or not. Actually I am surprised I made it this far lol.
Yeah I don't know of any jedi in the movies having a double, but you did have that choice in KOTOR TSL tho but that was probably just to please customers..

Personally i am constantly switching between the two. I typically use single for bosses. It comes down to your style, comfort and preference.
