You do make a really good point, important thing to be said. However, when you've used up all profiles "starting a new journey" once they've all been used up with saves, you are not given the option to start again or overwrite a save. But what you can do is get rid of the save progress file that you don't want in the game but there should be 2 files. Remove those 2 and if they were not the ones you wanted to remove, restore it from the recycle bin. Deleting the files will give you the option to "start a new journey" just make sure to wipe out the ones you want gone, hope this helps :-) Oh and you can wipe out one profile to start a new journey on the last profile. :-) Make sure you don't wipe out the usersettings.sav file, just the backup and other file.
I am not sure, I can't run Star Wars Jedi: Fallen Order through Steam anymore because of EA. If you are having issues launching the game, you must locate the exe.shipping file which is the games launcher which I have already forgotten how to do. Perhaps you can find a guide on it. Otherwise, I have no idea how to disable cloud saves on EA. Sorry about that.
The Shipping exe. file is the only way I am able to play Star Wars Jedi: Fallen Order. A problem I am currently having besides that issue, my character sometimes cannot attack enemies, the lightsaber is still turned on even though it's on your characters belt not allowing you to attack at all. It's rather a pain to be honest.
For those that are confused about this whole discussion, seeing the game has been updated, you can now overwrite a save at anytime even if you have max saves, you can still overwrite one.
