Well, in-universe there are things that are specifically stated to be somewhat resistant to lightsabers. If I recall correctly, good quality vibroblades are said be coated in cortosis so they can block lightsaber attacks, at least for a time.
Mandalorian Iron/Beskar I believe it supposed to be able to provide some protected against slashes and glancing blows. But if you went in for a full power stab, it'd probably go right through. I think that's how it is for all of the lightsaber resistant materials.
Because clearly the armor isn't made out of lightsaber crystals. Even one lightsaber can still cut the hilt of another lightsaber. Which is not the saber itself (the glowing part).
Although it would be very interesting to see glowing saber armor. Surprised it's never been done. If it is ever done I imagine it would be extremely rare, due to how rare the crystals themselves are. Would probably need a good number for armor.
