They are really hard, but its good to have those kinds of missions in the game that require the full use of skills built up throughout the game and forethought.
However, they either ought to be the final missions (due to their difficulty), or to be challenge levels. Also it would be nice if they were adjusted so there was more than 1 or 2 ways to complete them (unique ways, not just optimizing the 1 or 2 viable strategies)
Then again, if we are talking about just the base mission without optional objectives, I think they are fine, even if a bit harder than normal (5). The issue comes from the total number of objectives and their spacing/the set up required to get them all (so you get every optional objective).
As a side note, please add a way to quickly remove debris and grass. I don't have an issue with setting things up, but hitting the ground with a hammer and throwing little blocks of debris out of the way does get old quick.
It would be much more fun if you didnt have to clear rubble so much, a vacuum cleaner tool would make theese levels much better
For Fine Arts, even if you know the exact route, it's a pain to do so as it takes many quick loads to even complete with all 6 paintings. It took me at least around 30-40 mins just to make a 100% run of fine arts a second lower than my previous run.

Insurance fraud was easy at first due to the blowtorch glitch (I was able to do it before it was patched, thank god) but now it's so hard to 100% I'd prefer to do fine arts over this one. I tried doing this the legit way, but ultimately gave up due to 2 vehicles screwing me over: the white suv and the lime lambo. The suv either misses the target or loses too much speed. The lambo on the other hand screws me over as well if the suv makes it to its target. There is way to much debris that is under the car when it lands on the ground floor, it takes one too many seconds to get out of. These 2 cars are why I am unable to legit the insurance fraud mission.
I give them both a rating of 2.
Since there's practically nothing left of the cars, you can toss them easily and plank them to the main vehicle- which has to be quick, and also tends to break off if you turn to sharp or other nonsense :/ After that it's fairly straight forward for the other cars & setup, but still a pain in the ass and I think I had 0.3 seconds left in the end. I don't know how many attempts it took, but it was definitely 3+ hours over several days. Probably more than that.
This was actually my third attempt to record it. The first two times, I had to do a lot of damage to the map with explosives, which greatly increased the lag, and after making dozens of tries and fails at getting all seven vehicles, the game crashed both times. Given it's around two hours of setup time, that's pretty disheartening.
I think fine arts is fine. Thats all i have to say for that.
However some things should change to make these levels less tedious: First I think that the cars should be easier to drive on grass and over small obstacles. It's really boring to clear out roads in the grass to be able to complete the missions with a decent score. I'd also like to see an easier way to clear away debris. A industrial strength leaf blower would be cool : )
Also there should be more ammo available from the start of the missions because it is neccessary to blow up a lot of walls. For me it was impossible on the first run, I hade to come back to it later with more ammo and better understanding of the game to complete those levels.
