60 seconds is not that much time
Seriously. Most of these mission require more time. I understand that you can set up your path to the escape vehicle and such without a time limit, but ♥♥♥♥♥♥♥♥♥ is the car mission impossible.

You can very easily increase the time limit to anything that you want by opening the Teardown\data\script\heist.lua file and the value for level.alarmtimer to the number of seconds you want.

If you mean Insurance Fraud, there's a trick to it.

You can cut the part with the alarm off of most of the cars without setting it off.

Fine Arts, however, later on, has no such trick. Both of them are beatable with 100% without trickery, but it's very hard and not necessary to unlock every tool.

Unless you mean you can't even get the minimum number without trickery. In that case you should rethink your approach, since it shouldn't be that hard.

Your "trick" got patched a while ago, cutting off the alarm now sets it off.

The car mission (Insurance Fraud) is the only one where I only have 6 of the 7 objectives done. The only reason I didn't get the last car, was that I would have had to destroy almost the entire map to set up the way for myself, which wouldn't end up well performance-wise.

Keep in mind, this is kind of a puzzle-game. It is intentional that you have to think about your strategy and plan things out. On that mission specifically you can carry 2 of the 7 cars to the truck before even starting the timer. The broken down car at the race track and the car on the helipad can both be dragged to the truck with the crane to make it easier.
You can also just watch some YouTube videos on the level to see how other people beat it. I was limited by my PCs performance (although i could have went on with 1 frame per second), but it is definitely possible to beat.

You can find solutions to all the missions on Youtube. Many are quite fun to watch : )

Yes, completing 100% of the Insurance Fraud mission (when you steal cars with the truck) is hard. But possible. I know how I can complete it now. But still figuring out how to do it easier, without setting it up for 2 hours. This is a good thing. It makes the game last a lot longer when there still is stuff to figure out even after many hours of gameplay.

I just have one complaint about it and that is when we need to clear debris to make paths to drive in. It's very tedious and quite boring. I hope they can come up with a solution for that. I like the idea that has been proposed before in the forum, to have a broom tool or something to clear away debris.

I 100% the game legit, and never progressed through to a new level without 100% the previous one... game is perfectable, you just have to get creative...

I beat the game 100% with the 60 second time limit. So it's definitely possible. Just took me a while.

I haven't watched any videos. I did the level "normally" Just used the cars hanging around to get from one place to another. Used the Jaquzzi pool, the lake at the front and the water/sea next to the garage with the digger nearby. I had a few seconds to spare. I did maybe 15 mins of prep - demolishing that main entrance connecting lobby but not much else.

have gotten very close to 100% completion, only some bonus objectives on the harder missions unfinished. most missions i 100%'d on first playthrough. you need to think outside the box.

You can reposition the greenhouse car if you carefully break the door off with the blowtorch. The hot tub has enough space to sink the supercar under the awning. Everything else is pretty self explanatory.
