Is the new DLC even interesting if you play Pagan?
Just asking, the description seems kinda vague. Pagan Theocracy? Did anyone try? Or is it just "oh you have a nice title thank you very much"?

I mean, I ASSUME it is for Christianity, and why not. Just though I'd ask before I buy something I never play.

The DLC adds puppet features for everyone so if that sounds interesting you might enjoy it. Don't bother with Pagan theocracies though.
I can't say right now how the AI interacts with it (a major factor for even outside Europe gaming on like the borders), but I'd say it's a bit like All Under Heaven or Northern Lords. If you have absolutely zero intention of playing the region or even near it, you can ignore it.

It's fun but quite different in framing from like normal feudal gameplay (thankfully).
you need to be a non admin/non tribal government with organized faith
What I'm wondering is, if you organize a pagan faith and switch to feudal government, can you then create things such as cardinal college and call ecumenical councils like the Chrstians do right out of the box with this DLC?

Nope. Those things, as well as clerical regions, are Christian only. In fact I'd say that Theocratic government as a non-Christian is mostly inert and should probably not be playable in its current state. Pagan gets flavor in the form of puppets, rites, and a more realistic way to change faiths, but that's about it.
Playing the 867 bookmark, I found it much difficult as the Norse to rule in England.. But I am also using the mod, Dark Ages, which makes the game significantly more challenging
For Pagan(not Asatru), I had started in the very bottom right corner of the map, and ended up accidentally taking over half the map before my first character died, along with none of the land going away on succession for my Pagan theocracy.(I didn't even go to war, religious vassal, convert, then they'll pretty much always become accept becoming your true vassal.)
