Or alternatively just invite rebellions, revoke all their titles and execute them all. If you can survive the first rebellion all the ones after are likely to be less dangerous if you’ve installed friends/allies/kids I’m the revoked provinces.
But then you don't let them eat it.
Get their duchies and mess them up, give a 3 counties to 3 different vassals in that area and a duchy title to a 4th vassal, do it with all of your vassals, they will be too busy fighting each other to care about you, even if one of them wins now the rest have claims and they want their land back.
Sure in Ck3 you get less out of the land if you mess it up but then again, if you're playing feudal you get so little out of vassals anyway that it doesn't even matter.
Other than that you can make bigger, stronger vassals (preferably of your own family and blood) and keep a handful of strong vassals happy, instead of hundreds of weaker ones.
