On your second playthrough, you should switch your morality path to the diametric opposite. Best way to do different missions.
I think you should just have a pool of knights and simply nominate who sits at the round table. Kind of like it works with the titles. This could allow for some experimentation as well, especially if you give the option to upgrade Joust to level a character to the maximum level, not just a single level.
2) The beginning is still going to be the same (Kay -> Dindraine -> Balin/Balan -> Ector -> Lanval -> Ector, for example). It will take you a bunch of missions for your playthrough to diverge, even if you are going for a complete opposite of your previous alignment. And you still want experience from all missions that you can do.
The devs are thinking about creating the ability to swap knights back and forth. We'll find out their decision tomorrow.
I understand the appeal of coveting every single knight. Mine, mine, mine. I just want to sample everybody. You can - for at least one mission. If you like them, keep them.
The reality is you have a make decisions anyway given a four person party. It's difficult to keep even 8 knights at max level.
Another option is playing the game more than once and focusing on different characters.
