Class ratio, what would you reccomend?
I'm less than halfway through my first runthrough, but I'm assuming I've found most of the classes of knights:

Defender, Champion, Marksman, Vanguard, Sage, Arcanist

Or as I think of them:
Shielded, melee DPS, ranged DPS, Rogue, Warrior/Mage, Mage.

Six classes, and only 12 slots on the Round Table. New knights keep popping up, older ones fall behind in terms of XP and even gear....

What would you reccomend as a ratio of the classes?
2:2:2:2:2:2 would be even, but....
Do you really need 2 marksmen? 2 Vanguard/Sage/Arcanists?

I'm currently running 3:3:2:2:1:1

I'm assuming that part of the challenge of the game is working out what style of adventuring parties to run with, and what knights I need for it, and what spares are needed given the occasional injuries....

But what sort of load-outs do you lot do?

It depends what mechanics present themeselves to you as you play, depending on gear that you find and tendencies you have as a player.

My first run was built around shield charge, so I had 4 defenders, and used 2 on missions. My evasive back rank worked best with 1 vanguard and 1 marksman, so I had 3 and 2 of those (wish I kept Bors instead of Boudicea but whatever).
I had 1 champion who I never used, 2 arcanists who I rarely used, and I got rid of my sage because my main defender Galahad had a party buff which outclassed theirs.

The game is flexible enough to allow for many approaches. Focus in on one style if you want, or run a broad general roster, both can work on any difficulty.
I'm running through my second campaign now and I enjoy having to whittle down my round table and make tough decisions about who to drop.
I'd say don't be afraid to lose characters that others might say are the best. Go with your gut. The more configurations we end up with the longer the game's life will be.

Defenders - I'd say 1 or 2 (not including Mordred). The main reason for having a spare (or two) is in case Mordred ever gets injured. You don't want him injured right before going on any campaign mission where he's mandatory pick. You can't go wrong with always having a Defender with you.

Champions - 3. Always have at least one Champion. Always. They are easy to build and equip (only one item) and they will carry you through 95% of the game.

Marksmen - I don't recommend Marksmen past Act III. At least not before the buff happens. If you're Old-Faith it's easy enough to replace Marksmen with Arcanists. As Christian if you want to have ranged support you could have 1, maybe 2, but be prepared for them to be dramatically less useful in Act IV and beyond.

Vanguards - 2. Reliable no matter at what stage of the game you are. You can even kill the final campaign boss with this class without too many problems.

Sages - 2. They're good support characters so they're useful to have on any team.

Arcanists - 3. I'd say Arcanist is the best class in the game in terms of ranged damage, support and ability to control the battlefield. An Arcanist always has a spot on my team whenever possible.
