Do order of the tadpole quest to get access to a bigger backpack.
Apply backpack mods which reduce the carry weight of specific items like food or chems.
Also use perk cards to increase carry weight or reduce weight of specific items.
Apply mods to armour pieces that reduce weight of specific items.
To be a powerful full health build you can use overeaters armour, with Endurance perk cards applied that make you tanky and perhaps use a vampires weapon until you gain access to all legendary perk cards slots.
If you become a carnivore then there is a useful item in the Atomic shop that generates food buffs that are of benefit. The Mirelurk Steamer gives you among other items some Smoked Mirelurk Fillets for Carry Weight Buff.
Also points in strength SPECIAL and on weapons, armour pieces increases carry weight,
I've soloed the game with all addons with two characters and working on a 3rd.
All solo minus grouping randomly years back.
Full Health "Insert type of build you want" in a search bar or on Youtube.
However, there's a major update coming in March with the Ghoul so many builds will be obsolete.
The game will teach you almost everything you need to know but you must have a build in mind and planned out. Trying to be a Jack of All will ruin a character and a waste of time.

Power Armor can be "cool" but it's another thing to maintain and need more materials.
Both of mine have several sets and my main only uses one for Lode Bearing/ore collection and going into Nuke zones.
Getting the Chem mod for backpack, lets you replace the Chem Perk card, because they DON"T stack effects.
If you have Heavy Guns are 90% less weight, look at the weight when you are in your stash. It will show you if you carry it, it's 3 lbs, but weight in stash is 20 lbs. So that can be switched around depending on how many weapons you want to carry.
I carry all ammo, thousands of rounds except for the super heavy. But 50,000 of assorted, doesn't weigh much. I use Secret Service and T-65 Armor and usually can carry 400 lbs, starting the day around 330, in Secret Service Armor. In Power Armor am overweight.
Known Plans need to be sold or dropped. I carry all meds, and junk except flux and keep around 30 of everything or 2 bulk. Sell excess every time at vendor or drop it.
That is just a little of what you can do. Ants, Radstag, and other food might get you stuck walking when they wear off so be prepared.
The only people I ever see complaining about overeaters are the jaded ones who didn't get it to unlock.
Backpack adds a lot.
Being a new player and learning who's advice is worth going with is the real learning curve. Most of the time you'll only learn via trial and error.
One of the problems with advice right now is the game is undergoing significant changes in how it'll all work. On the Public Test Server (PTS) right now and expected to go live in early March are changes that'll help everyone become more powerful.
That will be the first batch of significant weapon changes with many more set to follow. How it all looks in a years time could be very different, and that's the problem, time.
Spending time and effort towards something that'll change can put you on the wrong path. This upcoming batch of changes is all about introducing the Onslaught feature (currently known as Furious).
Furious is currently mediocre but after the update will become extremely powerful. Also weight reduction perks and some legendary effects are set to change. Power Armor is set to get a +10 strength boost which in turn will increase melee damage and carry weight.
My advice is to 'hold on' now and just do whatever to get by until that update in March (though BGS is known to delay updates if they don't test well). As after it goes live your goals and focus could change significantly.
