OP enemies
A few times now I've encountered enemies during daily events that are way over powered.

All I hear is a pulsating noise when they approach and my health just drops massively and then I'm dead.

I may be missing something very obvious, but I can't work out if it's a particular type of enemy or a weapon as I'm dead so quickly lol.

What gives? Power Armour or not makes no difference.

What events and what enemies in particular?

Could be enemies at mutated public events as they can be much harder if you are not aware of what you are in for.

Recently some event enemies like Heart of the Swamp and Swarm of Suitors were buffed significantly getting additional % DR on top of their own resistances to counter OP weapons.

Armor piercing is the way to go, although that won't negate all of the buffs some of those enemies have gotten. Check perks for your weapons to deal with that. Or equip an Anti Armor weapon.

Heart of the Swamp final enemy (Grafton Monster or Mirelurk Queen) take very very little damage from weapons.

Blood Eagles and Mole Miners, once during the Uranium Extraction event and the other was a Daily Ops Uplink event at Uncanny Caverns.
Each 'pulse' takes away about 20% health. No gamma guns or radiation involved

Daily Ops sometimes have a specific mutation that ignores all your resistances save for Power Armor % DR and legendary effect % DR. Could also be a reflective mutation that just send back the damage you deal to yourself. As for the others you've mentioned, never experienced issues with that. Unless it's of course a mutated event and the mutation is reflective.

You may have the answer there. I'll try and be more observant next time to murqtions

I think the reflective mutation has an audio que too. So that may have been it. Enemies will glow white.

Some times the Bug-Festa "it just works" (tm) borkes damage calculations

And it shows that the enemy did 10,105,501,512 damage to you with a shot... it happens its just a quirk of their 'flawless' programming

Sometimes its the calculation on hit, sometimes its the enemys base stat damage calculation

if its on hit you could be a brittle boy on that server
if its from the enemy then he will hit everything like an atomic bomb

From your daily ops comment its probably reflective enemies bouncing your own damage back

So if the enemies 'bounce back' the damage from my attack, how the hell does a player take them out??

The reflective mutation switches on and off. You can see that it's on when enemies have a white glow. When the glow is off, the mirror damage is off.
for the counter use explosives negates this

This is wonky though. It's not reliable. I've had enemies reflect damage even when the glow is off.

well the problem is that they SHOULD only be reflective when they glow solid white after a few white pulses to indicate the change is coming

but the server often borks that and they are reflective at unpredictable times

So either, just eat the fact that you'll be dying a few times in daily ops
or
get an explosive (grenades, grenade launcher, missile launcher, fatman)

Double mutation produce some really nasty combos one shotting everything. Dont sweat it.

Now they added the "reflection" mutation. If youre a high dps build you get one shotted. The reflection mutation has a x% chance to reflect y% damage. The higher the damage you deal the higher reflection numbers. so, yea, if you run an auto launcher with AoE and hit a group of 5.
