Yes, get Concentrated Fire perk and you can aim for their fusion cores. Unlike in Fallout 4, their fusion cores are always targetable in VATS, not only when they are in overheat cooldown mode when they are exposed.

They die very, very fast.
Also might be worth using % armor penetration values on your weapons, either from Perk cards, or weapon magazines.

Use mouse wheel to switch the target while in vats.

Sentry bots are meant to be a pain. Avoid them if you don't want to deal with them, they're pretty rare.

Sneak up behind them, apply plasma flamer for maximum effect. Run and gun you lose half damage due to no stealth and will get wasted.

I can 2 shot Sentrybots in PA with concentrated fire and a basic gatling gun.

VATS is automatic targeting system that's part of all Fallouts, it highlights your enemy and with Concentrated Fire perk you can target to weak parts making more damage. Can't remember what the default key for it is, you can check it from keyboard settings.

I dont know if that sh1 was bugged or sum but i couldnt target the fusion cores and had to kill it by shooting on his body 10 thousand times. (And yes i had concentrated fire equipped)
