How do i chop down trees for wood or gather long sticks?

you don't chop down trees. You just pick wood from logs already fallen on the ground or wood piles.

Finding wood scraps directly is from wood piles, and fallen logs. Just walk up to them and you'll get a prompt to gather. You can also get them by finding wooden junk and items, then scrapping them at most crafting stations.

Just walking along the river from the wayward to flatwoods going along both banks and going away from the river bank a ways you can easily get over 200 wood scraps if i remember right. Long time since i did it last. There is even a perk to pick up more wood each time.

Also scrapping weapons gives junk materials such as steel and wood and there is a perk to give more when you scrap.

In and around Gilman Lumber just south of Vault 76 has tons of downed trees to harvest wood from. Then, if you still need more, walk towards Flatwoods and harvest wood on both sides of the road.

Each log gets you a few pieces of wood. It's not just one piece per log.

Edit; And, you can leave your ax at home.

Why dont kill a chicken and use the bone to make a knife instead?

Cuz bird bones are hollow and wont hold an edge.
