Up to you. Do you want to sell more often or get more profit on each item? You can probably get more from selling low, unless you've acquired the items by purchasing them from other vendors.
Selling a god roll you picked up for 1000 caps is still 1000 caps of profit, is what I'd say. If you play a lot it's best to sell low. If you have a discord- or other group with high level players that visit often then I'd say sell for the recommended price. There's no real point to trying to maximize cap profits with a cap limit, however it's still a valid method and if you spend large amounts of caps frequently that might be better.

Some weapons are really only good for script, my base price for such gear is 20caps per script value (21per if I'm in no rush to sell)
I fancy my camp a Handmade weapons shop. I make so many looking for my perfect roll that the misses go in the vendor. I sell them for 500-700 caps. Sometimes they sit there for a week or two, and then someone comes along and buys all of them.
Price should be inversely proportional to how badly you want to sell it. My goal with my vendor is to just fuel my weekly bullion purchases. I'm just looking to make that 6000 every week. But it isn't vital, so I put stuff up and leave it there until it moves. And it will, eventually. Be reasonable, but price should be what you think it is worth. The market will tell you if others share your valuation.
Plans however, I just sell at default
Usually i price them a bit under what the recommended price is and have never had much problem selling them for a decent amount of caps.
That's what I do, except I sell plans for half default price. Ammo one cap apiece.
Various scrap junk for either one cap, or less than the default price.
I sell quite a lot, have to buy legendaries to scrip to stay below 40k. Lately I've started buying random legendaries from Purveyor's, to stay below the 6k scrip limit.
And then sell them. Caps->Legendaries->Scrip->Legendaries->Caps

Anyway. As already said, things are worth what people are willing to pay for them. I've got plans that are supposedly "worth" upwards of 20k caps that I can't even pay people to take off my hands.
Sometimes you get lucky, sometimes you don't. List them at what you think is a fair price and if you do get lucky, one day someone will buy them from you.
In short? Price the things you want as long if it's within moderation, i mean don't sell a simple plan for 10K / 20K ect ect but you get my point.
Good weapons are priced as unsellable
and yes junk items are massively inflated
While even the best items are hard to pass off for 4k now
A quad peppershaker is priced at 3k, it's only one of the best heavy weapons in the game, no big deal algorithm, keep chillin I guess
