Lake bed right "under" Lakeside Cabins that section of the Lake Bed is 99% enemy free. Rare occasion will be ghoul or a robot which I think may get triggered from the claim workshop at the cabins.
Some bees and radstags here and there.
Super mutants not far but they never leave their tower.
Another one is top of Seneca Rocks of course,
if you want to have some meditation/relaxation time.
Just the sound of the wind in your ears.
Going close combat you risk losing health and stamina, going guns you need to watch your ammo, but stealth archer? You just gotta have arrows and enjoy shooting arrows in every location.
But those are just emergency quick-break spots. I don't think any of my camps have been attack-free, but I've got a couple that have pretty rare attacks -
1) My lakeside cabin at the top of the hill just south of Site Alpha in the Savage Divide - it's right near the rope bridge that's over a slightly lower lake near the radar array. Very rarely I'll get molerats or dogs attacking my crops outside.
2) A lakeside house on the south side of the lake behind Thunder Mountain PP. I'll get stronger enemies occasionally coming down the hill from the south, but a fence and elevated turrets keep them away, mostly.
3) My least-attacked camp is just up a dirt road that's on the road between the Red Rocket Mega-stop and the House of Fears, up in the north of the Savage Divide near the Mire. It's just out of range of wandering monsters from either location, and I've only had supermutants spawn and attack it once in all the time I've had that camp (since October - I started it as a Halloween build).

Can make some really peaceful camps there. Partially in the water.
