Scan them but don't pick up any you don't want. Sever hop to refresh the spawns till you get what you want.

If you don't defend the Workshop when the Event pops up, a very few minutes later you'll get another popup that says to Retake that Workshop. Then, you just go back there and kill far fewer enemies than you usually have to to defend it.
As far as waves go, you have to kill off the first wave before the next one spawns.
Many patches ago the Workshop event notices on your Hud got SCREWED UP! If you claim more than one Workshop, what you see on your Hud or map may not be correct. It may show the wrong Workshop to defend or the wrong type of enemies or the notice to defend may not show at all. When that happens open your Pip-Boy, go to Data, then Events. Uncheck the Event for the Workshop you're at then recheck it.
Also, at some Workshops, Wade Airport comes to mind, sometimes the enemy like Eyebots or Molerats will spawn under a foundation or under the terrain where you can't get to them. When that happens fast travel away then return and that will Usually fix it. If not, Fast travel away and back again.
EDIT: I got the broken toilet from defending a workshop. Still need bathtub (I kinda' have an odor). Thanks again for the tips.

Sheesh, it got changed from my what I had it, and didn't know it. I thought my default account was still set to what I had it (FO4). Thanks for helping me look at it again.
