1) I was a bit unclear. "Build Mode" is actually two modes - "Build" and "Modify". When you first enter Build Mode, you're in Build, where you choose an item to place. You have to hit 'Tab' to go into Modify, and then when you point at any item you can choose to move it, store it, scrap it, or whatever - so, when you go into Build Mode, then TAB to "Modify", point at the workbench, then hit R to bring up a menu to either store or scrap it, and choose (SPACE to scrap, R to store).
2) The behavior you're describing happens when an crafting bench's camera path is 'blocked' by the structure you're in - I have this happen when I build benches next to walls the wrong direction or inside those shipping containers or things like that. When you enter crafting, the camera pops to third person, starting above and behind you, then goes down to hip level as it swings to either your right or your left, depending on which bench you are using (Armor goes to your right, Tinker's to your left, can't recall the others offhand but you can check them on your own). To fix this, just move your bench to a more open area or turn it around so the side the camera swings to is toward the open side, not the wall.
