"Stock" part of the weapon can be a grip (which means pistol perks) or a stock (which is rifle perks).
They also have parts that affect fire rate. One shot per trigger pull is semi-automatic, Multiple shots per trigger pull is Automatic.
Bolt-action pipe gun with a pistol grip for the "stock" is not affected by rifle perks. Bolt-action pipe gun with a stock for the "stock", classifies as both pistol and rifle.
Your bolt-action pipe rifle only has "rifle" in the name due to the fact that is currently modded with a stock in the "stock" option.
same for pipe revolver rifle
basically gunslinger and rifleman cards work together if you mod that pistol/revolver to a rifle (add rifle stock)
