Imposter sheepsquatch is one of the toughest enemies in the game and very hard to solo, you need to be very good, well kitted and you need very high DPS.
While sniper rifles do hit hard they are slow compared to full auto with much lower DPS, imposter head lasers you to death before you can deal any proper amount of damage.
If you absolutely must try soloing it you need full troubleshooter's armor set and vampire's guns (or power armor and fast firing, hard hitting gun like .50 cal or gauss mini) but I'm not sure if any semi-auto vampire's rifle can keep you healed through the fight while holding all pylons.
My recommendation is that do the event with other players, that's how it's meant to be played.
Done few hundred Encryptids and that hasn't been my experience but whatever.
Great feeling? I get a great feeling when I'm co-operating with other players, helping them out etc, I don't need to prove myself by soloing them and it gives me nothing extra, I just use more resources myself for same rewards.
That works perfectly

Fisrt attempt -she didnt even touched me.
As for the other posters, Jotes was referring to the fight with the Sheepsquatch ImposterLING not the big bad one you fight in the Encryptid event - the imposterling is just a jacked up assaultron wearing a sheep on its head but because she has a ranged attack she wont run away and hide if she cant reach you with her melee attacks.
I solo it without sneak, just by using a little bit of Troubleshooters gear, a heap of stimpaks and an Antiarmor Enclave Plasma Flamer.
If it can't run, perhaps you can keep the distance and control the fight? Otherwise move when it moves, staying hidden, keeping the distance.
I don't remember if tormentor (modern renegade for pistols) perks help there, i think they might.
(Edit: the stealth suit works like a charm with the assaultron event, different topic, though)
(Edit2: The post has the different topic, silly me, the above edit counts.)
With sheepsqatches, as another poster mentioned, you can go for the legs to slow em down, then open up on the head or torso. You can't switch weapons while VATS is enabled, so you'll arm your first BPR, open VATS, target the leg, fire, close VATS, switch to your next pre-loaded black power rifle, open VATS, target the head/torso, fire, close VATS, switch to the next, reopen VATS, fire etc all while backing up. If you took out its legs, even after you've fired your initial 5 pre-loaded shots, if it's still alive you can either switch to a semi-auto sniper rifle to finish them off (mine's a scoped hunting rifle) or back up and wait for the last black powder rifle you fired to finish reloading.
They do, but the biggest detriment (for me) was not being able to switch rifles until the one you just fired had taken 2-3 seconds to reload before you could switch, and, switch too quickly, you still don't have a bullet in the chamber of the BPR.
Now that you can change weapons immediately, the reload time isn't quite so terrible. It is when you run out of loaded rifles, but that's why I still hang onto a semi-auto rifle, for the times my BPR doesn't quite kill or I run out of rifles and am taking on some swarming enemy like ferals. Playing stealth, too, you can usually use the same rifle 2-3 times before the caution becomes danger.
So this should be the easiest method compared to atrocities like "rolling dragons" or "social distancing".
