Depends on your build and gear I guess. Headshot and or critical if you use vats or just melee down if you dont. Thats what I usually do. A lot easier to handle when isolated but if you engage them with other mobs then they can be a hassle unless you focus fire them down because their blast ramps up pretty quickly.

if you can spare some points in Agility you can equip enforcer and get a shotgun. target one leg to make it crawl then the head so it cant fire that beam. shotguns are the best at cripling but it can be done with any weapon

Not tried enforcer, but one gun army for stagger / cripple with heavy weapons didn't seem to ever do anything.

As for the OP, with some armour ignore, they aren't too bad to deal with, but, which way you deal with them is down to your individual weapon choice.

Headshot? From my experience headshots do reduced dmg to Assaultrons..

Well I had taken them out between keeping them at distance, falling back to cover, and continueing moving while attacking in FO 4, and this also worked in FO 76. Just you have to make sure you are using a leveled up weapon. The best weapon in my arsonal in the Laser rifle as a fully automatic. Now this has worked well for this robot and the heavy combat robot. But that one the best time to strike is when it is in it's cooling mode. If you do not have one, get it the same way I did, collect it from the dead. I got mine off the mutant men.
lol, usally when I need a new weapon I will go Stalk one of them down to see what they got.. Which is how I got many of my weapons I can't build yet..

I'm at level 77, probably with a crappy build (still working on it as I'm a newer player) and Assaultrons are hard for me too. What works for me right now is sneak, head-shot with my 2 star hunting rifle (or whatever strongest long range weapon you have), retreat until hidden. I keep repeating this until the Assaultron is dead. If possible, I kill off all lower level enemies first as it makes it easier to retreat if you have to.

As Dreadwulf said, it really does depend on what your build and gear. I get 2x damage for sneak shot and have high Perception (15) and maxed out Rifleman cards, for example.

If you see the laser coming early enough and take evasive action, circle sprint around the assaultron and avoid the laser.

Another option is to use any obstacle to obstruct the laser. However, be careful. Glitchout 76 still has tons of bugs. If you are inside, the assaultron's laser will often pass through walls. Additionally, it's laser can also pass through elevation changes outside (hills, etc).

Regular obstacles such as control panels, cars and most trees should block it.

The final alternative is to either out dps it or out tank it. Have a stim ready though. Occasionally, it will back to back fire its laser. It seems to do this more often at mid range rather than at close or long range. So I suggest either fighting it from long range or close range if obstructing it isn't an option.

I usually close the distance as fast as possible. I'm not sure if many know this or not, but you can launch a sprinting melee attack that does heavy damage. I haven't parsed it to see how it compares to a power attack, but, with Incisor, a sprinting melee attack will take out 75% of it's health or kill it outright. Oh, and this it with being at higher health, not full on bloodied damage.

I use PA armor melee/heavy gun build. Bloodied, faster swing sledge or Bloodied Explosive .50 faster reloading or Furious explosive gatling gun.

PLEASE, don't aim for the head. Go for the legs, all extremities are the weakpoints on robots, and for additional effect, the limb will probably get crippled and a crawling Assaultron is a harmless Assaultron. ALWAYS go for the limbs, not the head.

yeah, it's really awesome, if you manage to cripple them, all they can do is shoot the huge laser and crawl, that's why I love taking one perk of concentrated fire, it's so useful in some situations
plus they seem like they are weaker in the arms and legs (like you said), protectons are weaker there too

this guys saying to aim the head... well learn your enemies weak spots:
1-Assaultron: Legs are the best, TORSO works as well with hight DPS
2- Mr Gutsy: That stupid propeler stucked on its ass.
3- Torso for the rest of the bots.
4- Humanoids: Go for the head.
5- Most reptiles are the head, but it is easier to hit their legs or torso.

If I can't get in a few good sneaky shots to damage her or are in a bad place with no where to hide/block her laser blasts then my last resort is to run around screaming Die Die Die! and swinging with my Grognak axe praying she drops before I do.

Corrections:
1.) Torso doesn't cripple them AND has higher DR. Always go for legs or arms.
2.) Just hit the eyes, way easier to hit and they are weakspots.
3.) Not right. Protectrons have their limbs as weakpoints, too.

Hey, that's a really good point! The more you know.

Stealth Suit, shoot at legs with explosive arrow, move. Rinse and repeat. They will almost always be shooting at where you were, not where you moved too.

If you want a specific weapon, I'd say accelerated Minigun, when in doubt throw more lead at the problem.
