It didn't exist in those games in "easy mode".
I've played them all since Fallout 2. The only one I never got to end-game on was Fallout 3. I liked FONV the best, bought all the DLC, played multiple times. Fallout 4 was super fun for building, and I played it on survival mode which really makes the world more tangible and fleshed out imho.
I don't remember all the mechanics of the games, but I know there have always been the ideas of 'resting' and 'healing' in all RPG's. Needing to eat isn't a novel thing, and in this case it has been fully integrated into the game mechanics - tying into PERKS and Buffs and Debuffs etc.
I would argue that in the evolution of Fallout, as it expanded into a realtime game [thus an opportunity for time-based submechanics such as thirst] that this is a devolution caused by shortsighted marketing input. It dilutes the brand, and the brand is the primary thing this iteration of the game has going for it.
It's been a long time since I played Fallout 3, but I don't remember that game having a hunger and thirst bar... What about Fallout 1 and 2? I never even played those, more's the pity.
Starfield is becoming first.
Gain few levels, grind hard and you will see the chore with thirst or hunger
Mutate to speed demon and you will be mad at the rate food and water consumed
Collect more mats and you will see another problem with +15% damage cards instead of food weight cards and useless foods in your inventory
Stay saturated and hydrated to get bonus, ye like 5 minutes increased ap regen
It wasn't a problem in Fallout 3, NV and 4 as you had player.setav carry weight xxxxx

Honestly thirst and hunger isn't a huge chore to take care of. Maybe you shouldn't be calling people noobs if you apperantly struggle so much with something a lot of people find easy to handle.

Immersion got improved severely over the Fallout iterations : heal over time and not instantaneous, not maxhealthing when sleeping for an hour, not calling Obsidian to make another game (that's a free jab for you, NV fans, yeaaaah, eat that, it's free, boooooom).
What I'm mad about, is that now you could have an army of level 1 fresh from the vault go and take down a Scorchbeast Queen, because scaling.
