One product per shelf worth it?

Does this affect game-play? I've seen costumers complain (thought balloon with different product) when the product is in stock on the shelf right next to it. I like to organise one small shelf with each product, but if this means that the costumers are buying less or taking more time to shop then I might reconsider. Any insight on what are the mechanics of shelves here?

I recently went to alcohol and snacks to one product per shelf and they do walk around the store taking more time, but check the statistics I wasn't able to identify a noticeable difference in products sold. But it's hard to compare apples to apples since sometimes you get a party bus and sometimes you don't.

I do it just because it's easier to restock, I don't have to restock as often and it looks nice. I have noticed that a lot of times when they get the thought bubble they will eventually go to the shelf with that product and buy it. But I'm not sure how many times they try before they give up though.

I have always used small shelves for this very reason. I don't mix product. My store looks much better too. I don't really care if it's less profitable as I am still in the positive variance each day. The only ones i mix are the car items, hats, glasses, bakery & Ice Cream.
