How to skin an animal?

Feel like there needs to be a tutorial or something. I hunted a wolf but can't skin it so I thought maybe I didn't have the right level of knife because apparently thats a thing... Then I got a rabbit but still cant skin it. Is the throwing knife no good? Because highlighting the tool tip for it says it gives yield for skinning. What button do I press to skin something? I tried F but that just picks up the rabbit and I tried E but that does nothing.

To skin an animal, you need to make a knife

Edit: throwing knives are offensive weapons. There is an actual knife you can craft that is meant for skinning
