Map Olympus = base game.
Map Styx + Map Prometheus = these are two additional DLCs.
There are three large maps (8x8 km) and many Outposts in the game.

Most of the dlc are just cosmetic packs.
The devs have been very upfront that many of them are just a way to donate funds to the project, while getting some cool stuff in return. I bought the painting and crystals dlc, and I LOVE IT. The painting are awesome, and the geode lamps glow in the dark. They turned out to be totally useful as markers. I have strings of these geodes through the longer caves on prometheus. They allow me to run through the whole cave in complete darkness.
There are two major dlc that add entirely new maps (yes, like ark). The styx pack and newfrontiers dlc (which adds prometheus). New frontiers adds tonsssssss of new content, including new animals and creatures, weapons with elemental effects (freeze, burn, poison, shock), new resources, etc.
Then there are outposts. Those are tiny tiny tiny maps with endlessly respawning resources. sort of like a creative mode. There for people to build dream houses, etc. I think they're useless, but many people seem to like them.
After that there are only a few dlc that add new functional, game changing, stuff to the game. Like the laika/pets dlc. Some part of that dlc are available to everyone: you can order chickens, cows, sheep and dogs from the workshop. Buying the full dlc for pets gives you horses, cats, more specific breeds of dogs (german shepherd, pugs, etc), and some other stuff.
