Yes, mounts can be killed if they get attacked. Many creatures cannot fight back.
I highly recommend you carry around enough parts to build a small house. Floors, walls, roofs, etc. Make a small building, and park the mount inside for safety.
When you're finished you can pick up all the building parts using Y, as long as they're at full health (so bring a repair hammer too).
Putting your mount on passive, lie down, and no eating should keep it in place some where safe a predator can't reach it. Like at the top of an overhanging platform like so: https://steamcommunity.com/sharedfiles/filedetails/?id=3366556342

I don't like the extremes needed to keep mounts safe...
Couldn't the "hitching post" be reworked as a creature deterrent?
When the mount is hitched to the post...
It acts as a creature deterrent...
Forget it...
I answered my own question...
Why not at least carry the basic "animal deterrent" and use the hitching post?
