Sorry, full of questions after a few years.
I need to build some planter boxes. It says I need dirt. I don't remember that being a resource. How/Where do I get dirt?

Build an iron shovel. You can dig for dirt in the forest biome.

If you're doing open world and running some of the Simple Missions, dirt is sometimes offered as a reward.
Can I just dig up dirt anywhere, or do I need to find a 'dirt resource location'?
I'm doing some mission right now where I have to build a hospital base out in the forest near a large lake.

You can dig as long as the ground you are digging is soil. Sounds obvious enough but some ground surfaces are actually rock.

I forgot that you can build a wooden shovel before you are able to build an iron shovel.

Left click the ground with your shovel to collect soil. Right click to create a crop-plot in which you can plant a seed and grow a resource.

Each tier shovel, when planting crops, will indicate the severity of storm that shovel allows a plot to withstand. The workshop shovel allows a planted crop to withstand the highest tier storm. Plants that cannot withstand a certain tier storm will eventually whither and rot given enough exposure over time to said storms.
