how do you beat the training mission?
I landed my ship, walked to the area with the crates of food and weapons (though the mission progress didn't update when I collected these), hit the bear statue to start the timer, then started shooting the red bear statues. But there was only about enough time to get 60 points, and you need 180

Also what do you do after that, is there a way to call a ship to go back into orbit and choose a new mission? Almost none of the controls are explained in this game

Look around for some different targets. Better shots give more points IE Head shots give more points. There's enough time to run the bear statue route - I've done it - but if you find some easier targets you'll have an easier time finishing the mission.

The reward is a recipe to build target dummies so it's not exactly critical to complete. To return to orbit you just return to your drop ship and ride it home. Its location is shown on the map and your compass when close.

Almost all of the controls are shown as on screen on the right side when holding an object. Try them if you don't understand what they mean. I think the only one that's not displayed on screen is the DESTROY BUILDING PIECE button. It's active all the time, check your keybindings for what it is - default I think is Y. It's basically just pickup the building piece you placed.

Last time there was a free weekend the same thing happened to me and I quit and uninstalled. This time I just grabbed the rifle, found a spot that I could stand and see most targets and shot them all from pretty much one place and it passed.

ok now i'm on the mission where you learn to craft shelter. There are hardly any animals around so I can't get fur to make a bed roll. Can't hit the running deer with a bow very easy, so I can only get wolves

To get fur on the first mission (I understand we are talking about Olympus), you will still have to learn how to hit the deer in the head {headshot} (they really do drop fur). If you can't do it the first time (it's not that easy on the very first bow), you can try to catch up with them and finish them off.
A wolf = a predator, and predators always drop more resources.

PS When you hold down the right mouse button, you perform ‘aimed shooting’ (i.e. like through a sight), the bow shoots more accurately.
It is advisable to learn: first, hold down the right mouse button to go into aiming mode, and then the left one to pull the bowstring and shoot (in the head of a deer or wolf).

Where do you even find deer? They see me before I see them (partly cause it got dark, though I do have a rag torch running). Am I meant to crouch and walk around till I notice a deer that hasn't noticed me? Or is there some deer detector I can use to make them appear from further away?
Later you will get a skill that will highlight the life bars above the animals.

However, at first you really will need to run up to them carefully and shoot them in the head from a crouching position.
