I believe it is a challenge built into the game.
There should be a "leash" on field bees.
I mean, how far should field bees travel away from the hive?
I would also like bee hives to be dormant at night...
You know "sleeping bees" where mining at night would be no problem...technically oo'

Most of us know that honeybees return to the hive at nightfall. The usual nighttime bee activities include keeping the hive warm, cleaning up debris, processing the day's nectar, pollen, and/or syrup collection, and of course, sleeping. Yes, honeybees do sleep at night!

Bees will disperse after a single melee hit. Unfortunately torches and fire whackers are not melee weapons in this case, but a pickaxe, axe, knife, spear, or your bare hands are. A spear will give you the best range and chance of hitting them before they hit you.
Bees have a simple attack pattern of coming straight at you with obvious sound effects telegraphing when their attacks will occur. So it's a simple listening and timing trick to hit them easily before they hit you on their attack run.
Bees will not stop chasing you unless you go underwater. Insects are kind of single minded that way.
I think they allow killing a SWARM of angry BEES with a just a KNIFE for players that don't take survival games that seriously...
I like the challenge of not killing bees :)
