The wolves will eat anything. They even eat veggies out of the food trough. But you can stick meat in there, or hand feed them meat if you want.
what i found always work was, just sneak behind the captured wolf and dont put carcass, instead put another bait on the snare. they will eat the bait and the taming progress bar will continue.

I had no problems with one of the wolves I was taming. But the second one would eat nothing except wolf bait that I put in the trap. Was frustrating
I've never had it happen.
I've accidentally shot wolves that were trapped. I've had them attacked and killed after being tamed and I didn't release them in time. I do feel like I've had a couple despawn when I moved away from the area, but I don't know for sure that's what happened.
I've tamed about 10 wolves. I've had 4 of them disappear after being leveled up to 25. I had a couple die in the arctic to polar bears when they got stuck trying to follow me and I didn't go back and retrieve them in time (I hoped they would teleport to my position while I kept going).
I just use the wolf bait as food. They're pretty easy to make. As soon as the food sign goes up over their heads I move over to the trap and reset the bait when they're done eating. Usually it takes 3 baits for them to be fully tamed. I also shoot other predators who come towards the trap so they don't eat the food intended for the trapped wolf. It's a mildly high maintenance process, but it ensures it gets done. It's a hassle waiting for a wolf (or boar or hyena) to set off the trap, so once they do I like to make sure they go through the training process fully.
I usually travel with a pack of 6 animals - 2 wolves, 2 hyenas, and 2 boars. I'll often have one or two leveling up, and the other 4 max level. Until they're about level 12 or so I keep them in defensive posture. By then they have the 4 points in health maxed, maxed physical resistance, and maxed out restore health upon killing. Just running around the map tends to level them up quickly, and also helps with whatever mounts you're using, too. Once you get past 40 leveling mounts is a pain in the wazoo. The vapor condenser is another way to level up your animals, but I don't run that much.
