If you'd rather rush a bit without building up to composite armor since it's a mission, I still recommend the health tonic. You can skip the anti-poison pill for tonic and just try to not get hit by the stinger instead. The food can just be the cooked prime meat, dried stringy meat, and dried game meat. That'll get you 20% melee speed, and 15% melee damage with a healthy chunk of health and regen.
If you can boost your movement speed high enough getting to the side of the scorpion when it's trying to grab you can give you free reign to melee it down. You just keep strafing and running along its side toward the rear legs while swinging away. It just keeps trying to turn and push you away without dealing any damage.
When the scorpion is under ground just kind of walk in a slow circle to keep an eye on things. The tail always pops up behind you so if you're spinning around looking too much it can slow the encounter down plus if you force yourself to slow down you can calm yourself a little.
A quick turn when you hear it pop up can get you into melee with the tail before it disappears.
Only when the scorpion pops up and does the long range straight line charge do you need to resort to a projectile weapons and dodging it. Some people suggest setting down hedgehogs for it to charge into, personally I don't think they deal enough damage to be worthwhile in this aspect. It destroys them much faster than they deal damage when it's charging.
The little scorpions are just a distraction as long as you're moving and will get destroyed by the boss more often than not. A single melee whack will end them as well - no need to waste ammo.
If your mission requires you collect the scales be sure to grab them during the fight as they are knocked loose from your hits. Otherwise the scorpion will damage them while he's doing his charge (That's where all the little numbers popping up while he charges come from) and they may not last to the end of the fight. If your inventory is tight and you really need to collect them you can setup campfires around the edges of the arena and stash the scales in them between stages. Cheap, immune to weather, and animals tend to walk over them instead of trying to chew through them.
And of course don't be afraid to retreat if you feel you're failing. It wouldn't hurt to setup a shelter just off the arena platform either for respawn, sleeping through the night so you can fight in the morning, and hiding from weather.
