You need to kill the parent, then go to the juvenile and use the option that pops up to start taming it, it will follow you around after that, you need to have created a bed, aswell as food and water troughs at your base, take the animal there and tell it to stop following when you are at the bed\troughs. It will then eat and drink, and lie down when it needs to. You can check its status by interacting with the beastie. Once it has been fully tamed, you need to go claim it and assign a name, after that you can instruct it to follow or stray in its current location, and depending on the creature you can put a saddle, packs or even a wagon on it to either ride or load it up.
Latest patch has beefed this all up, Moa is bloody fast now, wasnt previously.
Horsey is between the buffalo and Moa in speed but has more inventory, Buffalo is for carrying lots of items.
Once thing to note, theres currently a bug when riding the horse which makes your character grow in size which will cause other issues with doorways etc, so stick to the other animals until next patch
