You can dodge a bear's attack. You have to time it correctly. Took me a while to get it (and I still sometimes mess up).
You can also easily kill a bear if you jump in water. Unlike real life, they swim slow in game, and you can swim backwards just ahead of them, and stab them in the face without them able to hit you at all. (also referred to as "cheesing" the bear, because it's a lame, cheesy way to kill them)
This is why you don't bring a knife to a bear fight ;)
Depends on the bear....polar bear? Big nope because it has further reach. The other bears? Doable. Just walk backwards and keep stabbing. Did it with the first workshop knife too.
btw polar bears seem to have exactly the same hit range, they just hit harder and have more health
i wanna add, yes you can dodge them with skill but its hella broke, i can "dodge" a bear and see it hit thin air, yet the hit still registers on me, this goes for literally every animal. dodging and turning around to see it miss but still take dmg.

But yes, bears actually can climb up straight cliffs. I've seen it in real life. Their better climbers than goats!
Yeah but goats don't climb steep cliffs as if they were flat ground. Bears in game are as fast up a cliff as on flat ground.
And looking at that goats have four legs they technically are better climbers.
Kiting also works. When a wildlife takes damage, they travel to the place where you fired the projectile, not directly toward you. This can reposition the bear from a narrow path, or rinse and repeat to kill it.
Currently, I found non of the mission that requires players killing any polar bears. I assume the polar bears are completely optional territorial mini bosses, and their pelt can be used on the best arctic armor in this game. They also drop a lot of prime meat(than brown bears). Just give up about killing them using bows, it takes ages. Use Hunting Rifle, or avoid any contact. They are quite easy to be spotted on open snow fields, with the talent that reveals health bar it is even easier(I haven't got ambushed by polar bears yet).
