I did this because of the same problem you had, where there wasn't a sensible pecking order for auto-aim, and one of the aspects requires you to throw a bomb with your Special and then hit it with your ranged weapon. I don't know if they've fixed it, but my suggestion was it should prioritise the Special bomb (if it's been thrown), followed by enemies in your aiming cone (central first), followed by off-angle enemies, followed by urns. But maybe this shows why they're game designers and I'm not, since that suggestion breaks down in the Hades fight: you'd probably never hit an urn, and the whole point of them is that they should get you sometimes.
So, yeah, try Auto-aim off.
