The God assistance pretty much forces the player to deal with Asterius first, who as we know from the midboss fight is pretty basic as well.
So Theseus' role is to distract you and to make things difficult while you're trying to fight Asterius.
I also feel like all the boss fights teach you to deal with the final boss of Hades. The furies teaching following the boss and countering attacks. Hydra teaching dealing with adds and theseus and asterius teaching focusing on damage sources coming from across the arena Hades skulls
