you can even do the same at the wall if you quickly dash to the side when he is close to the wall. making him fail at charge at the wall is harder though.
what i usually do is i try to get athenas cast boon the one that makes ones cast deflect and then lure away minotaur from theseus, throwing the cast at theseus every time he tries to throw his spear at me, and only attack minotaur. after minotaur is dead i attack theseus.
but yeah the fight is hard and i cant say that i have 100% winrate at it, especially if i get unlucky boons.
try to memorize the attack patterns of the minotaur, usually he stands still for a while and draws a little circle before making his spin attack, dash directly behind him when he does that, then the attack will miss for sure, can even attack him during this time, he allways swings twice, and then when he is damaged he starts jumping at you after swinging, so need to adjust the times when to attack.
most important is to not lose patience and slowly drain their hp, better not get hit than do damage and get hit.
I just beat the minotaur individually for the first time, it took me 15min or so. I've watched videos where people kill them in 30sec...I have no idea how they deal so much damage so quickly.
It feels like the hardest battle I've ever tried in a game...
Assuming you now have a good idea of what kind of attacks both bosses have I recommend you to go for Aesterius first, if you try to take both of them is gonna be a real pain in the ass when Theseus does his thing.
Also don´t take them head on, it's best to stay by the pillars so you can both hide and stop Aesterius' strike and Theseus' spear with the pillars, just as they are about to hit you try to stay behind one and it should do the trick.
If you are having a lot of trouble with this fight I recommend Ares' boons so you can hit them constantly, he has a boon in which the enemy takes damage everytime they hit you and if you level it up it's really reallly good. I also tend to go for Artemis for the crits and Athena is always a good choice to have, especially her dash! And finally the most important God for my runs hahaha Hermes! Every chance I have I take his extra dashes and the boon that makes you invincible for a few seconds after dashing, they always come in clutch when I get close to losing a death defiance hahaha.
And lastly, don't beat yourself up! It's your game and no one is pressuring you but yourself, take your time, level up those boons and enjoy the ride. I beat the game for the first time on my 40th run and now I'm on my 50th and I have escaped almost every single one after the first time.

His attack pattern is pretty simple, he generally does two sweeping strikes and then a leap attack. The leap attack is in the direction you are but if you are right behind him it should never hit you because of the distance he leaps. As mentioned in an earlier post the charge can be countered by having him hit a wall/pillar. Sometimes this is easier said than done. Once he gets to about half life his jump attack and charge will shoot out 3 waves which I think always go the direction he's facing and to his left and right. If you're behind him you shouldn't get hit by them.
You need to keep an eye on the spear throw though from the other guy. If you dash to the left or right of his direction you should be able to avoid it fairly easily (try to avoid dodging it by dashing towards/away from him). You can also try fighting the bull behind a pillar so the spear can't hit you but as the bull moves around a bit this can be hard.
Once the bull is down you can focus the spear guy. He only has two attacks so they're easy to see, his spear throw and a spin attack. He will only do his spin attack if you are close and you can dodge it fairly easily. His spear throw can be avoided by staying behind a pillar or dodging to the side as it's about to come at you. Just remember that he pulls it back so don't just charge right in once it's thrown.
He'll block most of your attacks before he throws/spins but will then walk backwards which is where you can get some hits in. At half life a god will join in and put a bunch of aoes on the ground. There will be a lot but just keep running around to avoid them. You need to make sure to keep an eye on the boss though because as you're avoiding the aoes he'll continue to chuck the spear at you and spin. His attacks don't change though so keep waiting for the throw and then attack him as he walks away.
Funnily enough after beating the 3rd boss a few times I find them easier now than the Hydra. For some reason I always take too much damage from the Hydra, maybe I'm just trying to rush it.
The one thing guides may not be telling you is to focus on your boons. Not necessarily going for a specific build, but that your room choices should be heavily focused on boons. It can be surprising how much difference exchanging one resource room for a boon can make (don't hesitate to take a skull room with a boon over an easier heart room).
Equip Athena's trinket in zone one, try to get dash deflection. and switch it out to skully's bonus death defiance for the third zone
If you see an early Chaos boon, take it.
For rooms select dual boon -> hammer -> boon -> hearts
On the mirror, make sure you take three death defiance (for a total of 4), start with increases health and money, and +2 casts.
Don't hesitate to spend gold on health at wells if you are running lower, almost nothing is more valuable than not losing a death defiance.
in the second and third zone if you have the options to visit special rooms with people in, take the pom bonus to 4 boons in the second zone and in the third zone refill death defiance if you lost any, or +60% attack if you haven't.
Also, I personally start boss fights by throwing a cast, getting in an initial attack , then dodging out before their first attack (in this case the Minotaur first). For the minotair I run to the south east corner (puts the pillar between me and the spear). Use your full 4 bar call after Theseus goes invincible and starts to call on the gods to kill him fast when he's most deadly (and even better if it gives you invincibility).

What did it for me was throwing my casts at my current target, to get that extra 150% damage per hit.
I don't think I can beat them without the bonus damage.
I think in many games we're conditioned to assume that dashing is a form of dodging used to get 'away' from an enemy, and that getting away from an enemy typically means going in the opposite direction from where they are when you make the input.
With the Elysium bosses and with REDACTED, their attacks are so wide-sweeping forward that dashing (which is really teleporting because of the brief invincibility it grants, as long as you don't dash-strike) away rarely actually gets you far enough away - but dashing straight through them, aiming for their front, will get you out of that wide forward sweep range and in good position.
(that generally applies for a lot of enemies in the game, but IMO it becomes less 'helpful' and more 'necessity' with these bosses)
Asterius's charge can be avoided by dashing around the pillars, ideally goading him into crashing headfirst. You can also get speed boosts from Chaos and Hermes to help avoid it.
All that's left for him is to learn his attack patterns, and recognize when to dodge.
For Theseus, hiding behind pillars is the best way to avoid being sniped. He's hard to damage with his shield, so boons that can damage him are very handy. I love having my dash give Hangover or Doom, and I stack them as much as I can. He also is very vulnerable when he begins his second stage; I like to keep my God Gauge fully charged and unleash it then.

Here's my advice:
Focus on one at a time. Taking them on together can be a bit much. The Minotaur is much more aggressive, and is also much more defenseless, so take him down first.
While taking on the bull, keep tabs on Theseus' position. While taking on the Minotaur, always try to ensure there is a pillar between you and him, or be prepared to dodge at a moments notice.
When the bull's at half, you essentially have to deal with the same thing, just try to keep your distance to dodge the projectiles.
Once the bull is down, you get all the time you need to rush down Theseus (unless he kills you, of course). His shield is pretty annoying, but not impossible to get around.
If you get Theseus to half, once he calls on the Gods, that's your moment to attack. He's completely stationary and very defenseless. Deal as much damage as you can without getting hit.
Then, it's just phase 1 Theseus, just with annoying ground-based attacks.
