One thing you can do is, get a god's call with invulnerability (Athena or Ares, and IIRC Hades call works too), so that when Theseus cries for gods help, you can deal damage to him unpunished and not having to deal with his shield.
And if you got the chance, always pick Ares's 'Blade Dash' Boon, and just dash back and forth at enemies, which will summon Blade Rifts right at their faces and slowly chip away their HP, and at the same time, dashing will help you dodge a lot of damages.
The"cheese" strategy for this battle is to stand behind a column in front of Asterius and wait until he attacks you, when you see the animation quickly dash behind him and you can hit him a couple times. When he is about to jump just dash again and keep attacking him.
When Theseus half health and calls on the gods, he's stationary and undefended by his annoying shield. Just drop all the damage you can on him. Some of the gods he calls on have small, fast areas of attack and others have slow large areas.
For the small fast ones, dodge in a triangle around and through him. The fast moving areas take a second or two to catch up and you can constantly dash strike and attack through him for damage.
For the big ones, they're harder but usually they leave a little space between the areas that you can dash to before the damage drops on you. Use I Frames also.
If you use sword and have a half decent build you should be able to put enough damage on him to kill him before he even starts his second phase and brings up his annoying shield.
Also, his extreme measures pact makes Theseus way easier to deal with, he mostly just stays out of you way for the whole fight. Asterius gets a bit harder but nothing unmanageable.
I go the other route. The bull is so much more beefy that I tend to focus down Thesues first, sometimes on accident. If you take Zeus chain lightning on a rapid attacking weapon, like the rail, you'll tend to wear down Theseus even if you aren't really aiming at him.
Theseus is mostly easy to avoid. You get the target on your head. So you can just use one of the columns to block his shot, or just keep moving around the outside of the arena and he'll miss. The bull has a pretty easy to avoid moveset once your learn it.
If you end up fighting the bull solo as a mini boss a few times, it's much easier to learn his move set. He's really only got 3 moves.
1) Big wide swings, followed immediately by...
2) A distance closing leap towards you that you can easily dodge under. This is your dps moment. Watch for those big wide swings, then dodge towards him when he jumps. Hit him in the back. He'll usually jump at you a second time. Dodge towards him again. Hit him in the back.
3) Sometimes he'll do his bull's horns move where he charges at you. Mostly just dodge back and forth through a column here until he runs into it and stops. You can score some hits here, too, but it is less safe. Sometimes he just starts doing those wide swings out of nowhere again.
Sometimes he sends these shock waves out when he does his leap attacks, but it shouldn't be a problem since you'll be dodging through him to end up behind him every time he leaps.
Once you've got the bull's moves down, all you really have to worry about is Theseus and his spear timing, so you can pummel him right after he throws and has his back to you.
On normal I sorta just smack whoever I'm near. If I get the pre-fight then I kill bull since he's already lower, and if I have a good build I just kill them both simultaneously. But extreme it's way easier to take out Asterius first. I haven't played normal in a while though, I need those heat points.
