For actually fighting Asterius, dodging through his jump attacks to behind him is usually good, I usually dodge away from his swipes but I think through him works for those too, and when he does his charging attack, you lead him to a pillar or wall for him to hit to stop him. I use the wall, because he would sometimes just run around the pillar instead of into it. Angle him one way then dash the other way so he hits the wall straight on, might take some practice to not get hit while doing so, but it stops him every time. As mentioned, the only thing Theseus can do while you are fighting Asterius is throw his spear, which is clearly telegraphed for timed dodging or just using the terrain of the pillars to block it.
Once Asterius is down and you fight Theseus, it can be an easy if somewhat slow process. He only has two attacks, spear throw or spin, and has a several second long cooldown between attacks during which he often walks away from you. Dodge his attack, then hit him for a couple seconds, then move away a bit to dodge the next attack, repeat until dead. You can time your dodges to stay on him to kill him faster, but that can be left for a later thing to improve on. When he does his call, he stands totally still for the duration of the initial cast, so you can either focus on dodging the call and going back to the normal strategy (with some extra dodging of his aftercast sometimes), or try to burst down Theseus during the call while he is defenseless, usually with a greater call you have charged at this point. The ones that turn you invincible like Athena or Ares can easily do both, but anything with good DPS and some decent dodging skills can get him low or dead while he stands there.
Oh, and hope his god isn't Demeter. Otherwise you'll have a bad time even if you beat him regularly already.
About the part of losing less health I can tell you to learn the patterns and everything.
Ignore Theseus, he will only occasionally try to snipe you or do a spin attack if you are close.
And the minotaur is just the same as you encounter him in the midway point, shockwaves when he finishes an attack after he lost 50% health.
About the call Theseus makes, doesnt matter who answers you should focus on avoiding the attacks. Once he is done the god will always do an additional attack occasionally, each having a different pattern. Artemis focuses the middle, Aphrodite makes large circles around your current position, making the middle a blind spot. So on and forth. Note that while he does the call you can also attack him freely so you can sneak a bunch of damage.
May try to get some more health. Also note that some explosive attacks like festive fog ignore shields from experience so maybe go for those if you have a hard time damaging him as he likes to hide behind it plenty.
Sort of depends on weapon unlocks but the shield can tank either of the two once the other has gone down without too much trouble.
Also practise the minotaur solo on the mid boss room can help get his pattern down.
