Theseus's call being dangerous is the exact reason you *dont* kill him first. He only does that when he gets to half health, so if you leave him alone, he has exactly two attacks he can do, and if you kite the bull away from him, he has only one he can do, and that is far easier to dodge than the full suite of bull attacks. Once it is just Theseus, you are free to focus him down without distractions; this also typically gives enough time to Greater Call him, which can often kill him before he finishes casting.
Most of the players probably kill Atreus first, and that's definitely what you're supposed to do. Having to deal with him + gods raining on you + the bull is the hardest this fight can get, so avoiding it makes sense.
Also, Atreus is clearly the bigger threat in the fight. He actively chases you, his attacks hurt and offend a large area. All Theseus does is he throws a spear at you from time to time that is very well telegraphed and avoided with a dodge or just by hiding behind the pillar. And when you get close to him he does a single AOE attack, which you can avoid by just not getting close to him, or a single dodge.
When you're focusing Atreus, Theseus does not make things much more difficult as a result. On the other hand, when you try to focus Theseus, Atreus is a significantly bigger annoyance that cannot be avoided, he WILL come to you. You also make Theseus do his AOE which is harder to avoid than his throw. There really is zero reason to focus Theseus first, unless you actively want to make the fight harder.
when the bull is dead theseus alone is stupidly easy since he only has 2 attacks: the javelin throw followed by a slow walk in the opposite direction that you will use to hit him and one forward aoe attack, after that one he will stand still for like 2-3 seconds so you dash behind him and get 2-3 hits on him then repeat until he dies
aslo when theseus is at half life he will use one random god power. most of these are easy to dodge/avoid just sticking to the walls or just dashing. its a good time to hit him since he will be completely still casting it for like 5-6 seconds.

If you manage to send asterius to the graveyard (nah joking the bull's already dead haha) and you're low on health try to take some distance and study his attack scheme.
Also some good old "hit and run" tactic could work.
I did manage to beat them on my first try if i remember correctly but damn, i had some nasty stuff on like almost full Hermes power up.

Definitively kill the minotaur first, you don't want to deal with his charges while trying to dodge Theseus ♥♥♥♥♥♥♥♥ god attack. Besides he's the one that will actively chase you, so taking him out first will help. Also, if you manage to find and beat the minotaur alone, he'll have a bit less of health later.
The minotaur has basically two attacks: the charge and the combo. He usually grunts or makes some kind of noise like that when he's about to charge. When he does, try to make him crush against the obstacles or against a wall. It takes a bit of time to get the timing right. If he's too close, just dodge away until you have enough distance.
Most of the time he'll be doing his combo, two swipes and then the jump attack. If you're far enough you should dodge to the sides, but if you're too close to him try to dodge towards him, since he'll move forward when he starts the attack. A lot of the times he'll repeat the jump attack 3 times, he's very vulnerable after doing that.
Theseus has basically 3 attacks. If you're far from him he'll use the spear. You'll see the crosshair on you and you have time to notice it. But sometimes you're too distracted with the minotaur or you'll dodge at the wrong time, so in my opinion try to put an obstacle between Theseus and you as long as you can. After throwing the spear he turns around, so you can safely hit him then.
The second is his round attack, which he'll do if you're close enough to him. He'll telegraph it with a faint white circle. Like the minotaur combo I think you should move to the sides, but if you're too close dash towards him because like the minotaur, he'll move forward.
And his 3rd attack is the ♥♥♥♥♥♥♥♥ god call. Each god has its own pattern, some are easier and some are harder so you'll just have to get used to them. First they do a big barrage, and then they'll follow the same pattern.
Some that I remember are: Zeus will throw lightning in your general direction, Athena will attack in a circular pattern, first from the outermost part and then from the inner part, Artemis will hit almost all the center of the arena and Demeter will summong rings that grow larger.
Also, you usually have some time to hit Theseus a couple of times between his attacks and that of the god, you just have to get the timing.
I think this is all the useful information I can give. The rest is practice and getting used to it.
Personally, I find the ability to Charm granted by Aphrodite one of the best abilities in game. Charm Theseus and concentrate on the Minotaur. I also like the deflection during dash from Athena and the debuffs from Dionysus. Actually my first several breakthroughs included a build based on either Aphrodite or Dionysus, or both.
