Once Theseus is alone he's pretty easy. Also unless you have the time limit pact on then it isn't a race, take your time.
Stay away from Theseus, and the bull will come to you. Watch and learn the Bulls attacks and keep an eye on when Theseus' target is over you; even walking side to side will avoid the snipe. You'll soon learn the Bulls tells and timings. Theseus on his own is pretty easy to dodge.
Other than that, it's mostly just learning to dodge Asterius' attacks properly.

I kind of prefer to kill Theseus first, in his enraged mode summoning god powers all the time he is far more annoying than the bull? Even more because certain god powers are clearly more dangerous than others. If you time your dashes well you can make the bull rush into a wall and get stunned for a bit after all.
In general it helps to have some Athene skills, so you have the ability to parry certain attacks and also getting the revives from the permanent upgrades.
