Are all values additive in Hades?
Does any % stack multiplicatively or with diminishing returns? And are there caps?

Evasion? Chamber reward chances? Rarity chances? Crit damage? Damage reduction?

To my knowledge, speed bonus is the only thing that stacks multiplicatively.

This is why Rush Delivery - the Hermes boon that converts a portion of your speed bonus into a damage bonus - is so powerful, especially in conjunction with Hyper Sprint.

Thank you. What about damage reduction? 60% looks like a quite powerful (can it be higher?). Are there any caps in the game?

Can't say for certain. I know damage resistance specifically from God Mode caps at 80%, though I'm not certain if that same cap applies to all damage resistance, or how God Mode combines with other sources of damage resistance.

I do know that 100% Evade is possible under the right circumstances, and is a popular gimmick build. Lambent Plume, Zag Fists, Greater Evasion, Second Wind, and Smoldering Air.

I'm sorry to have to disagree with Puzzlemint, but I'm nearly certain that just about all defensive bonuses stack multiplicatively. Dodge, Damage reduction etc. You can never be 100% protected. Damage output bonuses stack additively.

The most accurate thing I can say with certainty is that there is both additive and multiplicative stacking. Some of the items on the wiki will call out being one or the other, but the only way to be certain is to test for yourself.

It’s hard too because isolating variables and ensuring all modifiers are accounted for is nearly impossible. I’ll test the easy stuff (mirror of night, aspect and tier 1 boon interactions) in the near future and we’ll share what I find. Generally I just assume worst case for myself and am pleasantly surprised when a build exceeds my expectations as a result.

Now I am sure Critical damage is a multiplier. What about the Mirror ability which increases the damage dealt to the target with a bloodstone? Or -33% to damage of the automatic rocket/grenade launcher?

Crit is a multiplier, anything that says "+X% damage" is additiive (that includes the mirror bonus for bloodstone/backstab/etc.), not sure about the hammer penalties that reduce the damage, might be reducing base damage which would then impact all bonuses.
