You are overthinking your approach to boss fights. You need to be super aggressive to succeed in this game.
Dash attack, then two hit.. dash attack, one hit, dash attack, dash attack, dash attack.
Be RELENTLESS . You will be surprised how much damage you avoid just by dashing back and forth across a boss with controlled mayhem once you have a rhythm and know the signs of needing to back off and run away.
I strongly suggest an Artemis crit build for EVERY weapon. I always start a map with her trinket, because it is the cornerstone of every serviceable build.
Also the person above me is very correct. To do well you have to be suuuuuper aggressive, always attacking and dodging at the correct moment. You WILL get hit a few times and there is almost always no avoiding it, but you will always have a chance to heal up before major boss fights/going to a new level. get the extra health mirror upgrade ASAP. I cannot stress the mirror upgrades enough. unlock them before unlocking weapons.
Artemis crit builds might be good for a little while, but the artemis builds are usually weak compared to aphrodite attack boons and her duo boons with dionysus and ares. Theres a few tier lists out on youtube if you want to check out which synergies are really good and what you should shoot for if you want to become super strong.
Hope that helped. It's a bit of a wall of text though. tl;dr: Play smart, get the important mirror upgrades, learn patterns, learn synergies.

Yeah i mean you are immune to damage while dashing, and you can even attack while dashing. So dash a lot.
I got her with the shield weapon (3rd attempt on Meg, 1st attempt with shield). Block proved to be very useful, particularly because of the secondary dash from just releasing the block. That, plus proper dash attacks, kept my damage-dealing up while keeping me alive from projectiles and her area attacks. I pretty much ignored the spawning enemies.
There are a sh+t ton of nuances to get used to between builds. I'm still learning to navigate through the most desirable path of escape. Your choices make all the difference, and I'm mostly unsure of them.
I know you beat Meg all ready but THIS is the correct answer to your post. If you decide to go further into the game you'll want to do this for every boss. Dash i-frames and DPS are all that matter. Dodge well and do enough damage so you don't have to dodge well for very long.

Game is devious.
Grab the extra dash from the Mirror of Night. I find if I've dashed into the lava, I can dash out again before the damage starts.
Broken speartip is your tool against things like that. Keep unlocking those keepsakes.
