4K RESOLUTION
Somehow I cant seem to find any resolution over 1080p, is that a bug?

Could you try setting the launch option /AttemptHighDPI=true ?

> · Right-click on Hades in your Steam Library
> · Select 'Properties...'
> · Press the button that says 'Set Launch Options...'

It's been working in 3840x2160 for me since the day I launched it.

Would that property improve quality or anything?

That property will (hopefully) prompt the game to allow you to select the higher resolution settings--sometimes it doesn't notice that you can by default. If you already can select 4k resolution, it won't have any affect.
