With each weapon having 3 different aspects thats a total of 24 different weapons and potential movesets. Some of the aspects are similar to the base zagreus weapons (i.e. have similar movesets), whereas others have a completely different playstyle. For example the base sword and its play style is quite different from the Poseidon Sword aspect (which gives bonus cast dmg and the ability to knock loose your cast crystals by using special attack, so your playstyle changes from hit and run with short combos into a caster focused playstyle (got my best clear time with this build for the lower level heat runs can currently do, Poseidon knockback cast into wall is pretty deadly, especially for clearing the Styx rooms in record time).
Once you have all of the trinkets from the different gods then you can influence which gods (and boons) you will get in a run so can try out a range of different builds (e.g. Sword one I mentioned above with Poseidon Cast, or easy one for the shield is to take Aries boon that gives Doom on special ability)
Game doesnt appear to have the same level of online documentation/faqs that other ARPG/Roguelite type games do (e.g. Icy Veins diablo 3 guides) so at this stage information on the best builds and boon+weapon combinations seems to be scattered, with a fair bit of it being outdated as it was written back when the game was in early access (before different weapons were patched/nerfed) or at a high level.
A few content creators/youtubers have some decent updated build guides e.g. Haelian and Jawless Paul. I guess its hard to give an ideal build because of the boon RNG (even with god trinkets and limited rerolls), so often its easier to just focus on the 4-5 main boons (and any duo boons) that you are after for a run. At the end of the day the majority of gameplay variety ties back to the weapon aspects and their movesets.
