While Athena/Ares is definitely strong, my preference is Aphrodite/Ares for the shield because it feels more natural for the shield's moveset - bull rush to apply Weak, use special immediately after to apply doom, dash out of the way and then repeat. It also feels a bit safer for bosses.
With Athena/Ares, it seems optimal to alternate between attack and special repeatedly since Athena's attack clears the Doom effect, but you can use it for hit and run attacks in the same way.
If you have Ares on special and Athena on attack, the sequence would go bull rush-special (Doom)-attack/bull rush (Merciful End).
Another way of doing it is to put Ares on attack so it's applied with bull rush and Athena on special so it gets detonated with the followup special, so the sequence would go bull rush-special. This is fine for bosses but that has the drawback of not applying Doom to as many mobs in normal encounters.
I only use athena and ares on zues aspect though, i like to abuse the use of each build, the spinning shield keeps applying doom meanwhile i keep clearing them with auto attack =D

Same. I've found with Doom on Attack with delayed Doom (stacking Doom can work if you have Pulverising Blows), Deflect on Special, you can just dash strike around bosses applying Doom whilst your shield procs Doom every 0.3 whilst deflecting attacks. I found that having deflect on attack is less consistent than having it on the special.
