I agree, Slay the Spire is much more repetitive than Hades. I have more hours in Hades than Slay the Spire and I'm not done with Hades yet. Dying to get stronger is pretty much the definition of the Rogue-like genre so I'm not sure how you purchased Hades expecting anything else.
I won't deny it. It is irritating having to deal with a shieldbearer blocking things that probably shouldn't be blockable, like exploding arrows. I don't think the devs would be changing monsters at this stage since the game is not in Early Access anymore. :(
Arenas also give you plenty of room to dodge, cover from ranged enemies and predictable traps to use.
Damage sponge tell more about state of the build. By the Elysium you are supposed to get boons in all main slots and make a build. With that even armored soldiers go down fast enough. Once you hit good mirror's upgrades, they will melt.

For the shields, the basic tactic is to run towards them and dash through them. They'll almost systematically respond by dashing towards you, but since you used the dash, you'll be behind them already. Even if they started their attack early, the invincibility frames of the dash will usually protect you. Once you've baited them, they'll stand still for a second or two with their back exposed to you.
For the other enemies, as with pretty much all enemies in the game, try staying mobile as much as possible.
Jk, but the boss of Elysium was a pretty big difficulty spike for me. Now, I hardly die to it anymore, but if you're having trouble handling Elyseum, you might want to prepare to get rekt a few times.
Keep moving, pay attention to patterns, and try to select your boons so you have a build that makes sense. A good build will usually be centered around 1 or 2 moves you'll be using all the time. The idea is that you'll get your first boons and try to strengthen them to have good damage potential. If you spread yourself too thin, you won't deal enough damage to survive, especially when you're still learning the patterns. Good damage potential sometimes comes from secondary effects, like Ares' curse effects. Your base attack's damage can suck, but if the curse hits for 150, you can start messing enemies up. Also, try saving up. When a run starts going bad early, it's easy to get stuck in a loop where you'll use all your money to get your health back, but that means you'll pass up on more long term items in the shop.
The game isn't supposed to be fair the first few times you play it. You're gonna die, a lot. The question it asks of you is "are you willing to learn from your mistakes to get better ?"
I'll be honest, after a while you kinda get used to all the attack pattern and it become relatively easy. I used to dread the pink butterfly balls and now I don't mind them. Elysium is more of a dps check than anything. Once you realise that and match the threshold then you are fine.
Daedalus upgrade in Elysium shouldn't be skipped.
Edit: By dps check I mean "you need to have your build already figured out" and use your main attack
Another tip for the flame wheels (little chariots that blow up), is to remember you can dash through obstacles. If you get them triggered into chasing you, bait them into crashing into a wall by dashing through it.
Also, really the game can't be for everyone. If you're not enjoying whatever game, play something you like, and have some fun!
elysium is mostly a breeze until the boss. The minotaur is easy to beat but theseus is quite difficult.
